Choco Pie

Chocolate, Marshmallow, and Sponge Cake. When they come together, you get one of the most memorable sweet treat of your life!


As a kid, I use to love Choco Pie and I still do. Though the marshmallow has reduced and the quality has drastically gone down. I was extremely disappointed when I had my last Choco Pie, the filling wasn't even there and everything else tasted "disappointing"






I decided to make Choco Pie myself! I searched for the recipe but I could only find giant Choco Pies all over the internet. The best thing I like about Choco Pie is its size. It has the perfect size, not too big, not too small. I didn't want to change that, so I made my own recipe!!!

I'm so proud of the result! Extra filling! Spongy, soft cake, and dark chocolate coating!

I think mine tasted even better than the ones you get in a store. hah!

I couldn't believe my hands or my mouth. Moving on, lets go straight to the recipe.

There are three steps to this

1. Baking the Sheet Cake

2. Preparing the filling

3. Coating the sandwich with chocolate

The things you'll need are:


Ingredients

Sheet Cake

3 eggs

1/2 Cup flour

1/2 Cup sugar

1 1/2 Tsp vanilla

Filling

2 egg whites

1 Cup sugar

1 Tsp vanilla


Chocolate Glaze

1 Cup of your favourite chocolate

1 Tbsp oil (unflavoured)


Directions

Sheet Cake

Beat the eggs for 4-5 minutes and add the sugar. Beat again for 5-6 minutes until pale in colour. Fold in the flour. Pour the batter in a sheet pan. Bake for 12-14 minutes at 160 C.


Filling

In a double boiler, cook egg whites and sugar until the sugar is dissolved. Remove the bowl from the heat and whip the egg whites for 10-12 minutes or until they are think and white.


Chocolate Glaze

Melt chocolate with oil in the microwave. Give it a mix after every 20 seconds so that the chocolate doesn't burn.


When the cake cooled, it's time to put them all together!

Assembling


Cut 4" round circles out of the sheet cake. Fill half of them with the filling and make a sandwich. Refrigerate then for 10-15 minutes, then cover them with chocolate. Let the chocolate set for 6-8 minutes.


And there you have it! Your very own, home made Choco Pie!
