Makhana (Fox Nut) Cake

Who would have thought of Makhanas (Fox Nuts) in a cake? This is the healthiest cake I've baked! The Makhanas give this cake a different texture and a nutty flavour. Mixing Whole Wheat flour, Jaggery Sugar and Olive Oil is what makes this cake healthy, guilt-free and soo Indian!
Makhanas are high in magnesium, fibre and protein. They are low in calories which makes them a healthy snack option. You can also add protein powder for some extra protein. This cake is high in fiber as it has whole wheat. You can substitute gluten-free flour if you are gluten intolerant.
Adding Olive Oil to the cake makes it rich in antioxidants, OMEGA 3 and healthy fats which are good for your body.
This cake won't spoil your diet. Made with high fibre and unprocessed ingredients, they make it one of those 'diet foods' which you can have in moderation and satisfy your sugar cravings.

Ingredients
1/2 Cup ground Makhanas
1/2 Cup Whole Wheat Flour
1 Cup Jaggery Sugar
2 Tsp Baking powder
1/4 Cup Milk
1/3 Cup Olive Oil
2 Eggs
1/4 Tsp Cardamom powder
1 Tsp Vanilla
Pinch of Salt
Directions
Beat the eggs until doubled in volume. Add the sugar and beat for 3-4 minutes. Add oil, salt and beat for another 2-3 minutes or until well combined.
Mix all the dry ingredients and gradually mix them in eggs. Lastly, add the milk and gently fold.
Bake @180C for 15-20 minutes depending on your oven.
It tastes best when fresh out of the oven.
