Mocha Banana bread Muffins

Zero refined sugar, healthy fats (used olive oil), no refined flour (used oats flour), good for the body and soul!
This recipe is adapted from Laura's Tutti Dolci
Here's what you need-
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
1 1/2 cups oat flour
1/4 cup cocoa powder
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/2 cups mashed ripe banana
1/3 cup coconut sugar (or jaggery powder) (original recipe has 2/3 cup honey)
1/4 cup olive oil (original recipe has coconut oil)
1/2 cup low-fat buttermilk, at room temperature
1 large egg, at room temperature
1 1/2 tsp vanilla extract
1 Tbsp instant coffee, in 1 Tbsp hot water
1/3 cup semisweet chocolate chips + more for decoration
𝗠𝗲𝘁𝗵𝗼𝗱
Preheat the oven @180°C
Mash the bananas, add eggs, buttermilk, sugar and coffee. Whisk well.
Mix all the dry ingredients.
Fold the dry ingredients into liquid ingredients.
Pour the mixture evenly in muffin cups or cupcake liners.
Sprinkle choco chips on top.
Bake for 30-40 minutes (might take longer depending on the ripeness of bananas and your oven)
Enjoy fresh with coffee or milk!
