No Bake Coffee Cake

If you live in India, then you know Parle G biscuits are a necessity. No matter which part of the country you are in, you will always have Parle G in your house. At least I did when I was little. Tea and Parle G are a sacred couple. This dessert so Indian, with all the ingredients from Indian brands, Amul Chocolate, Sleepy Owl Coffee and ofcourse the star of this dish Parle-G biscuit!

It's a kid friendly cake. It does not requires any oven, blades or fire. Just a fridge and microwave to melt your chocolate.


For the frosting I used Chocolate ganache, Chocolate whipped cream + Mascarpone cheese. Its sorta kinda Italian Tiramisu, but an Indian version.


This recipe is good for when you have people coming over or you just want to have a good coffee dessert.




Let's get to the recipe-


Ingredients


35-40 Parle G biscuits

1 Cup Strong Coffee

1/2 Cup Whipped Cream

1/2 Cup Mascarpone Cheese

1/4 Cup Castor Sugar


For Ganache


1/2 Cup Fresh Cream

1/2 Cup Chocolate (I used Amul Dark Chocolate)



Directions


Ganache-


Make the ganache by heating cream and chocolate in the microwave for 3-4 minute and steering after every minute.


Cake-

  1. Whip the cream, cheese and sugar. Add half the ganache to it. Beat until lightly stiff.

  2. Dip the biscuits in coffee one by one and arrange them on your serving dish. Spread the cream mixture evenly and repeat this process 3-4 times. Depending on how much cream you put in 1 layer.

  3. Freeze the cake for 3-4 hours or overnight.

Before serving, spread a generous layer of ganache on top and sprinkle chopped chocolate chunks.
