Almond Banana Bundt Cake

We all know the good old banana bread. We might have some favourite recipes. I've tried some great (some not so great) recipes. From caramel banana cake to whole wheat, eggless ones. I was never satisfied with any of them. Spending hours to find a decent recipe and testing it myself. I created my perfect, humble banana cake.
It's wholesome, heartwarming, perfect as a coffee cake or even breakfast. If you are a 'cake for breakfast' kind of a person. In this version of bundt cake, I added crushed almonds for some texture and nutty flavour. Turns out it's a game-changer! This recipe requires eggs. I will soon post one which is eggless and whole-wheat.

Here's what you need-
Ingredients:
2 1/2 cups refined flour
2 tsp baking powder
2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla extract
1/2 cup crushed almonds/ almond powder
1/2 cup dark brown sugar
1/2 cup castor sugar
3 eggs
1 1/2 cup buttermilk
1/2 cup oil
3 medium-sized overripe bananas
Method:
Preheat your oven to 180°c
Mash your bananas in a bowl and add vanilla, eggs, buttermilk and oil. Whisk well
Sift flour, salt, baking powder, baking soda, nutmeg and cinnamon in the same bowl. Fold gently. Add crushed almonds and give a final fold
Pour the batter into a bundt pan and bake for 30-35 minutes
Let it completely cool before demolding. Serve with chocolate sauce or caramel. And don't forget your favourite tea or coffee.
