Whole Wheat Zucchini Cheddar Bread

For those days when you want to eat healthy. But you don't want to give up on the taste. You end up with tasteless salads, detox drinks, boiled veggies and oatmeal. Who says healthy can't be tasty?
Few greens are just unbelievably uncooperative. If you don't like zucchini and similar kinds of greens. This bread is what you should try.

It's comforting, cheezy, you don't even taste the veggies and has an umami flavour. 🍞🧀🥒 You get the nutrition of veggies without the unpleasent taste.
Here's what you'll need to make this cheezy zucchini bread-
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
2 cups whole wheat or mix grain flour
2 Tbsp powdered sugar or honey
1.5 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp garlic powder
2 tsp oregano
1 cup buttermilk
1 egg
1/4 cup olive oil
1.5 cups shredded cheddar cheese
10-12 chopped olives
10-12 pickled jalapeño slices (optional)
1.5 cups shredded zucchini (squeezed of excess water)

Preheat the oven at 170°C
1. Shred zucchini 20 to 30 minutes in advance. Put it in a cheesecloth and squeeze all the water. Leave it in there until it's time.
2. Shred cheddar and keep it aside
3. Mix all the dry ingredients. Add 1 cup cheddar, olives and zucchini. Keep some olives for the top.
4. In a separate bowl mix all the liquid ingredients. Pour them in the dry ingredients and mix well.
5. Pour the batter into a loaf tin. Cover it up with the remaining cheese and olives.
6. Bake for 22-25 minutes at 175°C
Tastes best with chicken or tomato soup.
