Gluten-Free Healthy Chocolate Pancakes

Pancakes are the best comforting Sunday breakfast. But when you are on a diet or gluten intolerant, they are not the best option. And most of the gluten-free recipes I've tried from the internet are dry, flat and absolutely not tasty. Some require xanthan gum which is not really common in every household.

You all must have heard of those 3 ingredient oats, banana and egg pancakes. I took that as a base and levelled it up. To make the fluffiest, healthiest and delicious gluten-free and refined sugar-free pancakes.


Here's what you need-


Ingredients:

1.5 cups oats flour

1/2 cup raw cacao powder

1.5 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

3 tablespoons coconut sugar see notes

1 large egg

1 teaspoon vanilla extract

2 cups milk (dairy/non-dairy)


Method:

1. Mix wet and dry ingredients in 2 separate bowls.

2. Gradually add the liquid to the dry mix.

3. Heat a non-stick pan over medium heat.

4. Pour the batter using a measuring cup. Let it bubble and flip. Cook it for a minute and repeat the process.


Stack up as much as the batter allows. Top them up with dairy-free whipped cream, chocolate sauce, fruits, more chocolate and whatever you like on your pancakes.
