Oats Banana Bread

Bananas Bananas everywhere but not 1 to eat. Cause they are overripe and we are making banana bread! Not just any banana bread. We are turning the classic recipe by @merrillstubbs into a healthier* one.


I swapped plain flour with Oat flour. And white sugar with Coconut Sugar. This recipe requires only ('only') 3 TBSP butter.

I make my oats flour by grinding up some instant oats in a blender. I've never purchased oat flour separately. Ever.


If you want to make a healthy version of classic banana bread, I'm sharing the recipe here. It's very simple (very very simple)


𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀

3 ripe Bananas

1 egg

1 tsp Vanilla Extract

2 cups Oat flour

1 tsp Baking Powder

1 tsp Baking Soda

2 tsp Cinnamon

Pinch of Salt

3/4 cup Coconut Sugar

3 tbsp melted butter


𝗠𝗲𝘁𝗵𝗼𝗱

1. Preheat the oven @180°C

2. Mash the bananas in a large bowl.

3. Beat the egg in the mashed bananas with vanilla extract and melted butter. The butter shouldn't be too hot

4. Mix all the dry ingredients.

5. Fold the dry ingredients with the liquid ingredients.

6. Bake for 25-30 minutes.


Let it cool and serve with Nutella, marmalade, fresh compote or your favourite jam.
