Lemon Cake with Mint Frosting

Summer calls for more fruits and coolers. So I thought of making a cake inspired by everyone's summer favourite drink, Mojito! Sounds weird? Trust me on this, it's not! This cake is refreshing on the palate. With mint buttercream, you will feel you're having a tic-tac.
The mint flavour doesn't empower the lemon cake. They are in perfect harmony with each other, which is very important to keep in mind while making this cake. A lot of people don't have the experience of these flavours and this cake can be a little overwhelming for them.
If you are making this cake for a crowd, make sure you know their taste. And if you are trying mint in a cake for the first time, keep it mild. If you like the flavour, you can add more the next time.
The lemon cake is soft, light and fresh, you wouldn't know when you finished the entire cake! It's one of the best summer recipes, just soo refreshing!! When you get the mint frosting right, just to your preference, you would want to have it all the time! The idea of mint frosting came to me when I saw Molly Yeh's mint cake with fresh mint frosting. I'd never tried fresh mint or any herb in my cake or frosting before and I was keen to know how it would turn out.
So here we have my take on Fresh Mint Frosting on Lemon Cake!

Ingredients
Lemon Cake
2 eggs
1/2 cup butter
1 1/4th cup sugar
1 1/2 cup flour
1/4th tsp baking powder
1/4th tsp baking soda
Pinch of salt
1 tsp vanilla
3 tbsp lemon zest
1/4th cup lemon juice
1/4th cup buttermilk
Mint Frosting
4-5 mint leaves
1 cup unsalted butter
2 cups icing sugar
pinch f salt
green food colour
Directions
Preheat the oven @180C. To make the cake, beat the butter for 3-4 minutes till its pale in colour. This step is extremely important for your cake to be soft, spongy and light. Add your sugar gradually and beat for another 4-5 minutes. Then, add eggs one at a time and beat until entirely mixed.
Sift in the dry ingredients in three parts alternating with buttermilk. Lastly fold your lemon zest, vanilla and lemon juice. Bake @170C for 15-20 minutes depending on your oven.
To make the frosting, heat the butter and add mint leaves, let it sit on low heat for 5 minutes, keep steering while its on fire. Remove from the heat and let it sit at room temperature for 30 minutes. Then freeze it. Beat the cold butter and gradually add sugar. Add the food colour to your preference, or don't if you don't like it.
Assemble your cake, decorate it as you like it to be. Spread your creativity wings and show the world how talented you are!
